Pear Tart Draft

My tart of orange-zest shortcrust, almond cream and whole pears poached in cinnamon syrup.

How I make it

Dough

  1. In a stand mixer with the paddle, mix the butter, sugar, flour and orange zest until a uniform dough forms.

  2. Wrap in plastic wrap and chill for 1 hour.

Pears

  1. In a medium saucepan, bring the sugar, water and cinnamon to a boil.

  2. Add the pears and simmer for about 20 minutes, until half-tender.

  3. Lift them out of the syrup, let cool slightly, then remove the cores.

Assembly and baking

  1. Preheat the oven to 350°F (180°C) and grease a 9½-inch (24 cm) tart pan with a removable bottom.

  2. On a floured surface, roll the dough out ⅛ inch (3 mm) thick, slightly larger than the pan.

  3. Transfer to the pan, press in, trim the excess dough and chill.

  4. For the almond cream, beat the sugar and butter in a mixer until smooth. Add the egg and beat until incorporated.

  5. Add the flour and almond flour and mix until smooth.

  6. Take the pan out of the fridge, spread an even layer of almond cream and arrange the pears on top.

  7. Bake for 40 minutes, until golden.
