Pecan Butter Cookies Draft
Butter cookies with toasted pecans that I shape into logs and keep in the freezer, then slice and bake whenever I want them.

How I make it
Preheat the oven to 300°F (150°C). Spread the pecans in a pan and toast them.
Once the nuts have cooled, chop them coarsely.
Put the butter, sugar and powdered sugar in a stand mixer bowl and beat with the paddle until smooth.
Add the vanilla, nuts and flour and keep mixing until a uniform dough forms.
Shape the dough into logs about 1¼ inches (3 cm) across (or into triangular logs), wrap in plastic wrap and freeze.
When you want to bake, take the logs out of the freezer, slice ⅜ inch (1 cm) thick and place on a baking sheet lined with parchment paper.
Bake at 330°F (165°C) until golden.
