Pecan Meringue Cookies Draft

Small meringue cookies with ground pecans and lemon zest, soft out of the oven and firming up as they cool.

How I make it

  1. Start beating the egg whites with the salt. When they begin to foam, raise the speed and add the sugar gradually.

  2. Keep beating until the meringue is stiff and firm, about 5 minutes with an electric mixer.

  3. Add the ground pecans, flour and lemon zest and fold gently with a spatula until evenly combined.

  4. Line a baking sheet with parchment paper and grease it lightly with butter.

  5. Using two teaspoons, drop small mounds onto the sheet, leaving space between them so they can spread.

  6. Bake at 400°F (200°C) for 8-12 minutes, until the cookies begin to turn golden.

  7. Take out of the oven and let cool completely, then carefully peel them off the parchment.

What I've learned

  • The cookies are still soft when they come out of the oven, so I leave them alone until they cool.
  • For pareve cookies, grease the parchment with oil or margarine instead of butter.
