Pecorino and Thyme Pinwheels Draft
Little puff pastry pinwheels with ricotta, pecorino and fresh thyme, an easy savory bake I make with no kneading and no rising.

How I make it
Lay the pastry on the counter and, using a ruler, cut it into strips about 6 inches (15 cm) long and ¾ inch (2 cm) wide.
Spread the pastry with a thin layer of ricotta.
Sprinkle with pecorino and thyme leaves.
Roll each strip into a spiral and set it, wide side up, on a baking sheet lined with parchment paper.
Drizzle with a few drops of olive oil and bake at 350°F (180°C) for about 20 minutes, until golden.
