Roasted Pepper Sauce for Pasta Draft

A smooth pasta sauce of roasted peppers, tomatoes and onion, with Parmesan, that I make when I have plenty of peppers.

How I make it

  1. Roast the peppers in an oven preheated to 400°F (200°C) for 20 minutes.

  2. Put the peppers in an airtight plastic container until they cool.

  3. Open the container and peel off the skins.

  4. In a pot, fry the onion in olive oil until golden.

  5. Add the peppers and tomatoes and cook over low heat for about 20 minutes.

  6. Transfer the sauce to a blender and blend until smooth.

  7. Season with salt and pepper, toss with the pasta and sprinkle with the Parmesan.
