How I make it
Dough
Stir the yeast, sugar and water in a small bowl and leave for 10 minutes, until the yeast foams and small bubbles rise.
Put the flour, salt and oil in a stand mixer bowl, or in a regular bowl to knead by hand, and add the yeast mixture.
Mix for 1 minute in the mixer or with a wooden spoon.
Knead for 5 minutes with the mixer's dough hook, or 15 minutes by hand on a floured surface, until smooth and elastic.
Oil a bowl with olive oil and put the dough in it. Cover with a towel and let rise in a warm spot for about 30 minutes.
Shaping and baking
Line a baking pan with parchment paper and preheat the oven to 350°F (180°C).
Flour the counter, divide the dough into 10 pieces and roll each into a 4-inch (10 cm) log.
Set out small bowls of the tomato sauce (or ketchup) and the cheese.
Spread a stripe of sauce along the top of each log and sprinkle with cheese.
Roll each log into a spiral and stand it on its base in the pan. Pack all the roses in snugly side by side.
Sprinkle the remaining cheese over the top.
Bake for 30-45 minutes, until the roses are deep golden and the cheese is melted and browned.
Cool for a few minutes and serve.
What I've learned
- I serve the roses with a salad.
