Potato and Sweet Potato Gratin Draft
Thin layers of potato and sweet potato with garlic, parsley and cream, baked under a weight until tender and golden.

What you need
How I make it
Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper.
Slice the potatoes and sweet potatoes thinly with a food processor or mandoline.
Put the slices in a large bowl, add the garlic, cream (or olive oil), parsley and seasonings and toss gently.
Arrange the slices in the dish in tight layers, pressing each layer down with your palm so no gaps remain.
Pour the rest of the cream and seasonings from the bowl over the top.
Set another baking dish on top, press down and leave it in place.
Bake for about 40 minutes, then remove the top dish.
Sprinkle with the cheese, if using, and bake about 20 minutes more, until golden. Check with a toothpick that the potatoes are tender, and serve hot.
What I've learned
- With olive oil instead of cream and no Parmesan, the gratin is pareve.
