Puff Pastry Pear Tarts Draft

Individual pear-shaped puff pastry tarts with almond cream and a fanned pear half, which I brush with the pear syrup as they come out of the oven.

How I make it

  1. Preheat the oven to 350°F (180°C).

  2. Make a pear-shaped template and use it to cut the puff pastry into 12 pear shapes.

  3. Arrange them well apart on a baking sheet lined with parchment paper.

  4. Blend the almond cream ingredients in a food processor until smooth.

  5. Fan each pear half by slicing it almost to the end, leaving the tip attached.

  6. Beat the egg with the tablespoon of water, brush it over the pastry and sprinkle with sugar.

  7. Place a spoonful of almond cream in the center of each pastry pear and top with a fanned pear half.

  8. Bake for 20-25 minutes, until golden.

  9. Brush with the pear syrup, dust with powdered sugar if you like, and serve.
