Butter Cake with Red Berry Preserves and Streusel Draft

A lemony sour cream butter cake with a layer of red berry preserves in the middle and crisp streusel on top. The batter fills two pans.

How I make it

Cake

  1. In a stand mixer with the paddle attachment, beat the butter and sugar.

  2. Add the eggs gradually, then the vanilla and the salt.

  3. Add the lemon zest, then the flour, and finally the sour cream.

  4. Divide half the batter between 2 pans, filling them halfway. Spread a layer of preserves in the middle and top with the rest of the batter, to two-thirds full.

Streusel and baking

  1. Mix the butter and sugar, then add the flour until crumbly.

  2. Scatter the streusel over the batter in the pans.

  3. Bake at 340°F (170°C) for about 45 minutes.

What I've learned

  • Instead of the preserves I sometimes use fresh fruit, dulce de leche, nut spread or nougat.
