Quinoa with Shiitake Mushrooms and Chives Draft

Cooked quinoa with dried shiitake, baby bella mushrooms and sautéed onion, topped with chopped chives. A side I also make as a meal on its own.

How I make it

  1. Soak the shiitake in boiling water for 30 minutes.

  2. Remove the stems and chop.

  3. Put the quinoa in a pot with the water (1 part quinoa to 2 parts water) and a little salt and bring to a boil.

  4. Lower the heat and cook for about 20 minutes, until all the water is absorbed.

  5. Fry the onion in a little olive oil.

  6. When the onion is translucent, add the baby bellas and fry until nicely browned and there's no liquid left in the pan.

  7. Add the shiitake and season with salt and pepper.

  8. Mix with the cooked quinoa and adjust the seasoning.

  9. Sprinkle with chopped chives or parsley.

What I've learned

  • If the quinoa looks too dry, I add a little olive oil. It isn't always needed; it depends on how dry the quinoa is.
  • The chives or parsley are optional, but they add nice color.
