Turkish Delight Cookies Draft
Sour cream cookies rolled around a cube of Turkish delight; I make the dough a day ahead and dust them with powdered sugar straight from the oven.

How I make it
Dough (the night before)
Blend the butter, sour cream and yolks in a food processor or stand mixer.
In another bowl, mix the flour, vanilla sugar and baking powder, and add gradually to the butter mixture.
Process until smooth, wrap in plastic wrap and refrigerate overnight.
Shaping and baking
The next day, preheat the oven to 340°F (170°C).
Flour the counter and roll the dough out to ⅛ inch (3 mm) thick.
Mark a circle with a 9½-10 inch (24-26 cm) round pan or ring and cut around it with a sharp knife. Remove the scraps and add them to the rest of the dough.
Cut each circle into 12 small triangles. First cut it into quarters, then cut each quarter into 3.
Place a cube of Turkish delight at the wide end of each triangle and roll it up, pressing the dough snugly around the filling.
Arrange on a baking sheet lined with parchment paper, ⅜ inch (1 cm) apart, with the tip of the triangle underneath so it doesn't open while baking.
Bake for about 20 minutes, until golden or very lightly browned.
Dust with powdered sugar right away. Let cool slightly and serve.
What I've learned
- Instead of the pinch of vanilla sugar, I used 1 tbsp of sugar.
