Red Pasta Draft
Pasta in a simple sauce of garlic, tomato paste and olive oil, from things I almost always have at home; a fresh tomato and Parmesan only if I have them.

How I make it
Cook the pasta in boiling salted water and drain.
Heat the olive oil in a skillet and gently cook the garlic.
Add the diced tomatoes, if using, and cook for a few minutes.
Add the tomato paste, water and salt, stir and simmer until the sauce thickens a little.
Toss the pasta with the sauce and serve with Parmesan, if you have it.
What I've learned
- The water is easy to measure in the empty tomato paste tin, two tins' worth.
- If I don't have a fresh tomato, I do without. Same with the Parmesan, if it's run out.
