How I make it
Preheat the oven to 400°F (200°C). Line 2 baking sheets with parchment paper.
Put all the dough ingredients in a food processor and pulse just until a uniform dough forms. Process as little as possible.
Turn the dough out and shape it into 3 ropes about ⅜ inch (1 cm) thick.
Cut the ropes into pieces and roll each into a ball. Poke a hole through each ball with your finger to make a ring.
Arrange the rings on the sheets, brush with the egg and sprinkle with sesame seeds.
Bake for 15 minutes, then let cool completely.
Store in an airtight container for up to a week.
What I've learned
- I don't overprocess the dough; too much processing makes them lose their crunch.
- The rings freeze well for up to a month; I warm them in the oven before serving.
- When they lose their crunch, I spread them on a sheet again and bake for a few minutes at 350°F (180°C), watching closely so they don't burn.
