Simple Chocolate Mousse Draft
A three-ingredient chocolate mousse, just chocolate, cream and a flavoring of my choice, that I start the day before and finish on the day I serve it.

How I make it
The day before
Put the chocolate in a bowl.
Bring 1 cup (250 ml) of the cream to a boil, pour it over the chocolate and stir well; a hand mixer works too.
If adding liquor, add it now and stir well.
Cool to room temperature, cover the bowl and refrigerate for at least one night.
Serving day
Whip the remaining 1 cup (250 ml) cream to stiff peaks and refrigerate.
Whip the chocolate-cream mixture until airy and lighter in color.
Gently fold the whipped cream into the chocolate mixture by hand. Do not use a mixer for this step.
Add the flavoring and keep folding until fully blended.
Spoon into serving glasses and garnish with whipped cream and chopped nuts, if you like.
What I've learned
- I start this mousse the day before, since the chocolate mixture needs a night in the fridge.
- I fold in the whipped cream only by hand; a mixer at this stage ruins the airy texture.
- Even if I've already added liquor, I can add another flavor on serving day.
- The mousse can also be served in chocolate cups.
