Soft and Easy Kindergarten-Style Rolls Draft
Soft, lightly sweet rolls like the ones made in kindergarten, braided from three strips and sprinkled with sesame, from a simple yeast dough made with oil.

How I make it
Dough
Mix the flour, yeast and sugar. Add the oil.
Add the water gradually while kneading. If the dough is stiff or dry, add a little more water; if it is sticky, add a little flour.
Add the salt and knead for 8 minutes, until the dough is soft and smooth.
Cover the bowl and let the dough rise in a warm place until doubled.
Shaping and baking
Punch down the dough and knead for 2 minutes.
Flatten the dough into a long strip 6 inches (15 cm) wide and cut it with a pizza cutter into strips ⅜ inch (1 cm) wide.
Braid three strips together and tuck the ends under the middle. Round each roll slightly between your palms.
Place the rolls on a baking sheet lined with lightly floured parchment paper and let rise for 20 minutes. Meanwhile, preheat the oven to 350°F (180°C).
Beat the yolk with the teaspoon of oil, brush it over the rolls and sprinkle with sesame seeds.
Bake for about 20 minutes, until golden.
What I've learned
- I knead in a stand mixer with the dough hook; it's the easiest way.
- Braiding three thin strips is my easiest way to shape these rolls.
