Spaghetti in Tomato Sauce Draft

Spaghetti in a sauce of fresh peeled tomatoes, garlic, chile and basil, which I serve with plenty of grated Parmesan.

How I make it

  1. Cook the pasta in salted water.

  2. Score an X in the bottom of each tomato, drop into boiling water for 2-3 minutes, transfer to cold water and peel.

  3. Cut the peeled tomatoes into strips. Put the insides and seeds in a strainer and press; keep the juice and discard the seeds.

  4. Heat the oil in a skillet over medium heat, add the garlic and cook for 30 seconds.

  5. Add the chile and salt and cook 1 more minute.

  6. Add the tomato juice and strips and cook for 8 minutes.

  7. Add the pasta to the skillet and cook for a few minutes, stirring.

  8. Add the basil, cook 30 seconds more and remove from the heat.

  9. Serve with plenty of grated Parmesan.

What I've learned

  • I sometimes enrich the sauce with cream and add onion too.
