Pancake Sushi with Chocolate-Coffee Filling Draft

Thin pancakes that I wrap around a chocolate-coffee cream, roll in candied pecans and slice like sushi. There's also a quicker way, as a regular roll.

How I make it

Pancakes

  1. Put all the pancake ingredients in a food processor and blend to a smooth batter.

  2. Heat a little oil in a skillet over medium heat.

  3. Pour in a ladle of batter and gently tilt the pan so it spreads evenly.

  4. When the underside is golden, flip and cook until the second side is golden too.

  5. Remove from the pan and repeat with the rest of the batter.

Cream

  1. Beat the eggs with the sugar for 8 minutes.

  2. Meanwhile, melt both chocolates in a double boiler, a pot set over a larger pot of gently simmering water without touching it.

  3. Stir the dissolved coffee and the liqueur into the chocolate.

  4. When the eggs have beaten for 8 minutes, turn the mixer to its lowest speed and slowly pour in the melted chocolate.

  5. Whip the cream and fold in the chocolate-egg mixture.

Assembly

  1. Line a tray with parchment paper.

  2. Transfer the cream to a piping bag with a plain ½-¾-inch (1-2 cm) tip. Set a little cream aside for sealing and coating the rolls.

  3. Pipe straight lines of filling onto the parchment and freeze for about 15 minutes, until partly firm.

  4. Cut the pancakes into strips wide enough to wrap the filling, about 1⅜ inches (3.5 cm) for a ½-inch (1 cm) tip and about 2½ inches (6.5 cm) for a ¾-inch (2 cm) tip.

  5. Wrap each line of filling in a pancake strip and seal the edges with a little cream.

  6. Freeze for about 30 minutes, until the rolls are firm.

  7. Spread the pecans on a tray. Coat the rolls with a thin layer of cream and roll them in the nuts.

  8. Freeze for about 1 hour, then slice.

Quick method

  1. Spread the cream over the pancakes, keeping a little aside for coating, and roll them up like a regular roll.

  2. Freeze for about 1 hour, until firm.

  3. Spread the pecans on a tray. Coat the rolls with a thin layer of cream and roll them in the nuts.

  4. Freeze for about 1 hour, then slice.

What I've learned

  • You can also melt the chocolate in the microwave. I heat it for 30 seconds (no longer!), stir, and repeat until fully melted.
