Butter Tea Cake Draft
A tea cake baked in a Bundt pan, with melted butter, lemon zest and almonds on top, that I make when I want a simple, airy cake to go with tea.

What you need
How I make it
Butter a Bundt pan, dust it with flour and scatter the almonds in it.
Melt the butter over very low heat and let it cool.
Stir the vanilla and lemon zest into the butter.
Beat the eggs, egg whites and sugar for about 1 minute.
Set the bowl over a pot of hot water on low heat for about 5 minutes, stirring now and then, until the mixture is warm. Keep the water from boiling so the eggs don't set.
Beat the mixture until it cools and triples in volume.
Fold in the flour, baking powder, cornstarch and the butter mixture until even.
Pour into the pan and bake for about 45 minutes in an oven preheated to 350°F (175°C).
What I've learned
- I keep the water under the bowl below a boil; otherwise the eggs start to set.
