Turkish Cheese Boureka Spiral Draft
A large Turkish boureka of phyllo rolls coiled into a spiral, filled with cheeses, roasted eggplant and roasted red peppers.

How I make it
Filling
Char the eggplants over an open flame. Cool slightly, peel, and leave in a colander for a few minutes to drain some of the liquid.
Roast the peppers in an oven preheated to 425°F (220°C) for about 25 minutes, until charred, turning them partway through.
Transfer the peppers to a plastic bag and close it loosely. Let cool, then peel, remove the stems and seeds, and cut into strips.
Mix all the filling ingredients. Add an egg to bind if needed.
Shaping and baking
Lay a phyllo sheet on the work surface, brush with olive oil and top with a second sheet.
Spread filling along the length of the pastry and roll into a narrow log. Repeat with each pair of sheets.
Oil a large baking pan, like a pizza pan. Place one log in the center and coil it into a spiral.
Coil the remaining logs around it. Brush with olive oil and sprinkle with the nigella and sesame seeds.
Bake in an oven preheated to 375°F (190°C) for about 30 minutes, until deep golden.
