Two-Ingredient Chocolate Mousse Draft

A quick chocolate mousse made from just chocolate and water, whisked over ice until it thickens, ready to eat right away.

How I make it

  1. Melt the chocolate with the water in a small saucepan over low heat.

  2. Transfer the melted chocolate to a bowl set over a bowl of ice.

  3. Whisk vigorously for about 5-6 minutes (a hand whisk is fine) until it turns mousse-like.

  4. Eat right away, or chill briefly and serve with whipped cream if you like.

What I've learned

  • Don't give up while whisking; it only thickens at the very end.
  • For an all-dark version, I melt 3½ oz (100 g) bittersweet chocolate with 1/3 cup (78 ml) water and carry on as usual. The result is very intense.
  • It doesn't work with milk chocolate alone. The cocoa solids in the dark chocolate are what make it set.
  • It doesn't work with white chocolate.
