Two-Layer Chocolate Cake Draft

A two-layer chocolate cake made with coffee, filled and covered with a whipped chocolate cream, that I make when I want a layer cake without much fuss.

How I make it

Chocolate cream

  1. Combine the chocolate and cream and microwave for 1½ minutes.

  2. Stir until smooth and chill for at least 1 hour.

  3. Take out of the fridge and whip.

Cake

  1. Preheat the oven to 350°F (180°C). Grease and flour two 8-inch (20 cm) round pans.

  2. In a stand mixer bowl, mix the flour, sugar, cocoa, baking soda, baking powder and salt.

  3. In a separate bowl, mix the milk, eggs, oil and vanilla.

  4. Combine the two mixtures on low speed. When even, slowly add the coffee.

  5. Divide the batter between the pans and bake for 35-40 minutes, until a toothpick comes out clean.

Assembly

  1. Let the cakes cool for at least 30 minutes.

  2. Set one cake on a plate and cover with half of the cream. Top with the second cake and cover with the rest of the cream.
