Yeast Rose Cake with Walnuts and Raisins Draft

A yeast rose cake filled with jam, raisins and toasted walnuts, which I arrange in the pan like a flower and brush with a milk and sugar glaze.

How I make it

Dough

  1. In a stand mixer with the dough hook, mix the flour, sugar, yeast and salt. Add the butter, milk and egg.

  2. Knead for 2 minutes on low speed, then raise the speed and knead 5-7 minutes, until the dough is smooth and pulls away from the bowl.

  3. Cover with plastic wrap and let rise until doubled.

Filling

  1. Mix the filling ingredients in a bowl into an even paste.

Assembly

  1. Line a pan with parchment paper.

  2. Flour the counter, divide the dough in half and roll each half into a 9 x 16½-inch (22 x 42 cm) sheet.

  3. Spread half the filling over each sheet, roll each one up and cut each roll into 6-7 pieces.

  4. Arrange the pieces cut side up in the pan, next to each other in a flower shape.

  5. Let rise for 45 minutes.

Glaze

  1. Put the milk, sugar and vanilla in a saucepan. Heat over medium heat, stirring, until the sugar dissolves, then take off the heat.

Baking

  1. Preheat the oven to 350°F (180°C) and bake for about 20 minutes, until the rolls are golden.

  2. Take out of the oven, brush with the glaze and bake 10 minutes more.

  3. Take out, let cool and serve.
