Ingredients: 3 large eggs; 1 cup sugar; 1 pinch salt; 7 tbsp butter, softened; 1 tbsp grated lemon zest (heaping); 1¼ cups all-purpose flour; ½ tsp baking powder; ½ cup heavy cream; butter and flour for the pan

A simple lemon loaf with lemon zest and heavy cream, which I make when I want a homemade cake without much work.

How I make it

Preheat the oven to 320°F (160°C). Butter and flour a loaf pan.
Beat the eggs, adding the sugar and salt gradually, not all at once.
Lower the mixer speed and add the butter and lemon zest.
Gradually add the flour, baking powder and cream.
Pour the batter into the pan and smooth the top.
Bake for about 1 hour at this medium-low heat.
