Tzukoro Phyllo Spiral with Roasted Vegetables and Cheese Draft
A large phyllo spiral filled with roasted eggplant and peppers and three cheeses, which I serve as a starter for a big table.

How I make it
Filling
Char the eggplants over an open flame until the skin is black all over.
Let cool a little, peel, and leave in a colander for a few minutes to drain some of the liquid.
Preheat the oven to 475°F (250°C) and roast the peppers for about 25 minutes, until charred, turning them partway through.
Transfer to a plastic bag and close it loosely. Let cool, then peel and remove the stems and seeds. Cut into strips.
Mix all the filling ingredients.
Shaping and baking
Lay a phyllo sheet on the work surface, brush with olive oil and top with a second sheet.
Spread a line of filling along the length of the dough and roll it into a narrow log. Repeat with every pair of sheets.
Oil a large baking pan, like a pizza pan, and set one filled log in the center.
Coil the remaining logs around it in a spiral.
Brush with olive oil and sprinkle with the nigella and sesame seeds.
Bake in an oven preheated to 375°F (190°C) for about 30 minutes, until golden.
