Chicken Thighs in Spiced Tomato Sauce Draft
Chicken thighs I brown and simmer in a tomato sauce with white wine, thyme and rosemary, served over rice.

How I make it
Heat the oil in a lidded skillet over medium-high heat.
Pat the chicken dry, season with salt and pepper, and brown for 4 minutes per side. Remove and set aside.
Pour off all but 1 tablespoon of oil, add the onion and cook for about 3 minutes.
Add the wine and stock and scrape up the browned bits from the bottom. Raise the heat and cook for about 3 minutes to reduce.
Stir in the tomatoes, thyme, rosemary and lemon-pepper, and return the chicken to the pan.
Bring to a boil, lower the heat to medium-low, cover and simmer for 40 minutes.
Serve over rice, sprinkled with the parsley.
