Crispy Chicken Bourekas Draft
Thin yeast-dough pockets filled with chicken thighs, onion and sumac, which I bake for just a few minutes and serve warm with a spicy tomato salad.

How I make it
Filling
Heat the olive oil in a skillet and fry the onion until golden. Add the garlic.
After a minute, add the chicken and fry for about 2 more minutes. Season with the sumac, salt and pepper.
Dough
In a bowl, mix the flour, salt and sugar and make a well in the center. Pour a little lukewarm water into the well and add the yeast.
Stir the water in the well until the yeast dissolves, add the olive oil and mix in the flour. Add lukewarm water a little at a time until the dough is smooth and soft.
Cover the dough with a towel or plastic wrap and let it rise for about 30 minutes.
Knead for about 4 more minutes and divide the dough into balls of the size you like.
Filling and baking
Preheat the oven to 350°F (180°C).
Stretch each ball by hand into a thin round.
Fill with the chicken and onion mixture and fold into a triangle, like a pocket.
Bake for 8-10 minutes.
What I've learned
- I serve these with a spicy tomato salad.
