Lemon Chicken Breasts Draft
Skin-on chicken breasts baked in a sauce of olive oil, lots of garlic, white wine and lemon, served over rice with the pan sauce.

How I make it
Preheat the oven to 400°F (204°C).
In a skillet over medium-low heat, warm the oil with the garlic and cook for about 1 minute, without letting the garlic burn.
Take off the heat and add the wine, lemon zest, lemon juice, oregano, thyme and 1 teaspoon salt. Stir.
Pour into a 9x13-inch (23x31 cm) glass baking dish.
Set the chicken breasts in the dish, brush them with olive oil and sprinkle with salt and pepper.
Cut the lemon into 8 wedges and tuck them between the chicken breasts.
Bake for 30-40 minutes. If the chicken isn't golden enough, put it under the broiler for 2-3 minutes.
Take out of the oven, cover with foil and let rest for 10 minutes.
Serve over rice with the sauce spooned over the chicken.
