How I make it
Clean and pat the chicken dry. Rub it all over with a mix of salt, pepper and paprika.
Fry the onions in the oil until golden.
Make the stuffing. Mix the matzo ball mix with a third of the fried onions, the egg, the water and the parsley.
Fill the chicken with the stuffing and close the opening with 2 toothpicks.
Set the chicken in a roasting pan and arrange the leg quarters, the rest of the onions, the garlic and the vegetables around it.
Season with salt, pepper and paprika and pour in the broth.
Cover with foil and roast in an oven preheated to 350°F (180°C) for about 45 minutes.
Uncover and baste the chicken with the pan juices.
Raise the heat to 400°F (200°C) and roast for 20-25 minutes more, until nicely browned.
Taste and adjust the seasoning.
